Pumpkin Spice Apple Power Balls

Energy balls are one of my family’s favorite snacks. Packed with fiber, healthy fats, and protein, pumpkin spice energy balls make for a satisfying on-the-go snack or a wholesome addition to your meal prep repertoire.

In this version, pumpkin pie spice, pumpkin puree, and dried apples evoke all of the cozy fall feelings. The recipe calls for a mix of cashews and walnuts, but feel free to play around with the combination - pecans would work well here. You can also just stick with one type, if you prefer.

Warm spices blend with sweet dates, dried apples, and pumpkin to make the perfect fall energy bite

Ingredients:

  • 1 cup roasted, unsalted cashews

  • 1 cup walnut halves

  • 1 cup dates (this is roughly 12 medjool dates)

  • 1 cup dried apples (I like the Bare brand)

  • 1/3 cup rolled oats

  • 1/4 cup pumpkin puree

  • 1/4 teaspoon pumpkin pie spice

Directions:

  1. Soak nuts in water for at least 30 minutes, then drain.

  2. Add all of the ingredients into a food processor and pulse until well combined. The mixture should stick together when you squeeze it in your hand. If it’s too dry and crumbly to hold together, add a pumpkin puree 1 tablespoon at a time, pulsing in between each addition. If the mixture is too wet, add a bit more oats.

  3. Using a small spoon, portion out 2 tablespoon scoops and roll into balls.

  4. Serve immediately, or chill in refrigerator.
