Pumpkin Spice Apple Power Balls
Energy balls are one of my family’s favorite snacks. Packed with fiber, healthy fats, and protein, pumpkin spice energy balls make for a satisfying on-the-go snack or a wholesome addition to your meal prep repertoire.
In this version, pumpkin pie spice, pumpkin puree, and dried apples evoke all of the cozy fall feelings. The recipe calls for a mix of cashews and walnuts, but feel free to play around with the combination - pecans would work well here. You can also just stick with one type, if you prefer.

Ingredients:
1 cup roasted, unsalted cashews
1 cup walnut halves
1 cup dates (this is roughly 12 medjool dates)
1 cup dried apples (I like the Bare brand)
1/3 cup rolled oats
1/4 cup pumpkin puree
1/4 teaspoon pumpkin pie spice
Directions:
Soak nuts in water for at least 30 minutes, then drain.
Add all of the ingredients into a food processor and pulse until well combined. The mixture should stick together when you squeeze it in your hand. If it’s too dry and crumbly to hold together, add a pumpkin puree 1 tablespoon at a time, pulsing in between each addition. If the mixture is too wet, add a bit more oats.
Using a small spoon, portion out 2 tablespoon scoops and roll into balls.
Serve immediately, or chill in refrigerator.
